Cooking with Kara:   

KIMCHI FRIED RICE

You will also need pre-cooked rice, a day old would be preferred as it will become less "gluey" when you fry it. 


Step1:

Start to prep for your kimchi fried rice. Firstly wash and peel the carrots then slice them into thin circles. You want the slices to be thin enough so they will cook faster. Next slice the green onion and leave to the side because this is used as a garnish. Next take your kimchi and cut it to your preference. I like big bits of kimchi in my fried rice, however smaller pieces work as well. I added about 1 and a half cups of kimchi. Depending on how many people you are serving you should double the ingredients for more than 2-3 people. Now prep is done, Yay!

Step2:

Add the carrots first into a fry pan on medium heat with about one tablespoon of olive oil. You firstly need to cook the carrots since they will take the longest. When the carrots are nearly cooked put in the kimchi parts and mix. This should only take a couple of minutes. 



Step3:

Keep the pan on a steady heat, then add the pre-cooked rice into the mix. Stir it around until all of the carrot and kimchi has evenly coated the rice. 




Step4:

After the rice has been evenly mixed. Pour in some of the kimchi juice which is in the bottom of the kimchi tub. This gives the rice extra kimchi flavour. Then add one tablespoon of korean red pepper paste. Add less according to preference. Korean red pepper paste is extremely spicy, so for less spice add about half a tablespoon to a teaspoon. 




Step5:

Mix all of the rice, kimchi and carrots together for another 3-4 minutes until well combined. Then add the sugar and salt to taste. The sugar will help counteract the saltiness and spiciness of the kimchi giving it really great flavour. 




Step6:

Serving time! Yay! Serve this kimchi in a bowl or on a plate. Add the spring onion as a garnish on top and (this is optional) sprinkle some sesame seeds on top. Also fry an egg up and add it on top of the kimchi if you like. (I forgot to add the egg sorry!)



And here is the final result!! Yummy spicy kimchi fried rice! This is a quick and easy meal which anyone can make and when there is nothing else to eat and you have kimchi at home!!
